Koottu Payasam

Ingredients for Koottu Payasam:

1. Jackfruit florets (Varikka) – 10, well-ripen, chopped into small pieces

2. Jaggery – ½ kg, melted

3. Jackfruit seeds – 8, boiled and powdered

4. Brown payasam rice – A handful, cooked

5. Well-ripen papaya – 1, cooked and smashed

6. Coconut – 2, scrapped

7. Cardamom – 4

    Dry ginger- 1 piece

    Cumin seeds – ¼ small spoon

8. Ghee – 2 big spoons

9. Cashews – 10

    Raisins – A handful

    Coconut pieces – A handful

How to prepare Koottu Payasam?

1. Boil melted jaggery in an urli.

2. Add chopped jackfruit, powdered jackfruit seeds, cooked rice and papaya to the urli.

3. Keep sauting till contents are well fried.

4. Extract 2 cups of 1st extract coconut milk from coconut and 4 cups of 2nd extract.

5. Add second extract of coconut milk to sauted contents.

6. Boil the contents till water content is almost absorbed.

7. Add thick coconut milk and put off the flame when payasam heats well (never boil).

8. Heat ingredients no: 7, make a fine powder and add to payasam.

9. Fry ingredients no: 9 in ghee and decorate your payasam.
