Bolu Huli

Bolu Huli is a traditional Udupi vegetarian curry similar to Sambar. It can be served with rice meals.

Ingredients for Bolu Huli:

1. White gourd – 3 cup, cut into square pieces

2. Toor dal (Sambar dal) – 1 cup

    Water – 4 glasses

    Oil – 2 small spoons

    Turmeric powder – A pinch

3. Tamarind – Lemon sized

4. Salt – For taste

    Jaggery – 1 big lemon sized

    Green chillies – 6, end split

5. Bolu Huli masala powder – 2 small spoons

6. Curry leaves – A handful

    Coriander leaves chopped – 2 small spoons

    Asafoetida powder – A pinch

7. Oil – 1 small spoon

    Urud dal – 1 small spoon

    Red chillies – 4 pieces

How to prepare Bolu Huli?

1. Cook ingredients no: 2 in a pressure cooker.

2. Extract juice from tamarind adding sufficient water.

3. Add ingredients no: 4 to it and boil it well.

4. Add white gourd pieces to it, close the lid and cook in low flame.

5. When it’s done, add ingredients no: 5 and 6, mix well and put off the flame.

6. Heat oil and temper ingredients no: 8.

7. Add it to curry and mix well.

How to prepare Bolu Huli Masala?

1. Heat 2 small spoons of coconut oil and fry 50 gm red chillies till it changes colour.

2. Fry 10 small spoons of coriander, 2 small spoons of cumin seeds, ½ small spoon fenugreek seeds and 2 small spoons of black gram dal without adding oil.

3. Add fried red chillies to it and make a fine powder to prepare Bolu Huli Masala.
