Kathirikka – Thakkali Curry recipe

Ingredients for Kathirikka – Thakkali Curry (Egg Plant – Tomato Curry):

1. Violet brinjal – ½ kg

2. Coriander powder – 2 small spoons

    Chilli powder – 1 small spoon

    Couscous – 1 small spoon, soaked in water

    Fennel seeds – ½ small spoon

3. Green chillies – 4

    Shallots – ½ cup

    Ginger – 1-inch piece

    Garlic cloves – 1 small spoon

4. Oil – ¼-1/2 cup

5. Mustard – ½ small spoon

6. Curry leaves – 2 stems

    Onions chopped fine – 1 cup

    Turmeric powder – 1 small spoon

    Tomato chopped fine – ½ cup

7. Salt – For taste

   Tamarind – Gooseberry-sized (soaked in ¼ cup water and squeezed)

   Jaggery – 1 small spoon

How to prepare Kathirikka – Thakkali Curry (Egg Plant – Tomato Curry)?

1. Split the ends of the eggplant, without removing the stalk.

2. Make a fine paste of ingredients no: 2.

3. Crush ingredients no: 3 together, and mix with the above paste.

4. Heat oil and sputter mustard seeds.

5. Add ingredients no: 6 in order and sauté well.

6. Add the prepared masala to it and keep sauting till the contents are fried well.

7. Add eggplant and sauté well.

8. Add sufficient water to cook eggplant, and ingredients no: 7.

9. Cook eggplant till the gravy thickens.

10. The curry should not be too thick in consistency.

11. Serve it with ghee rice, biryani or chapati.
