Karal Varattiyath recipe

Ingredients for Karal Varattiyath (Liver Fry):

  1. Chicken liver – 400 gm
  2. Turmeric powder – 1 small spoon
    Garam masala powder – 1 big spoon
    Salt – For taste
  3. Shallots – 10-15
    Garlic – 6 cloves
    Ginger – 2 small pieces
    Pepper – 1 big spoon
    Fennel seeds – ¾ big spoon
    Green chillies – 3
  4. Coconut oil – 2 big spoons
  5. Star anise – 1
    Cloves – 2 or 3
    Cardamom – 4
    Cinnamon – 1 small piece
  6. Chicken masala – ½ big spoon
    Curry leaves – 1 stem

How to prepare Karal Varattiyath (Liver Fry)?

  1. Clean liver, cut into small pieces and marinate using ingredients no: 2.
  2. Crush ingredients no: 3 and mix with chicken liver.
  3. Allow it to rest for at least an hour.
  4.  Heat oil and sauté ingredients no: 5.
  5. Add marinated liver and cook on a medium flame till it’s done.
  6. When it turns dry, add chicken masala and curry leaves.
  7. Mix your liver fry till the contents are mixed well, and turn off the flame.
