Ingredients for Karachi Biryani:
- Chicken – 1 kg
- Basmati rice – 1 kg
- Dalda – ½ cup
- Onion – 5
- Ginger-garlic paste – 3 tablespoons
- Chilli powder – 4 tsp
- Turmeric powder – 1 tsp
- Coriander powder – 2 tsp
- Garam masala – ½ tsp
- Oil – ½ cup
- Cardamom – 3
- Cinnamon – 3
- Bay leaf (Karuva ila) – 3
- Dry plums – 15
- Curd – 200 milli
- Tomato – 500gm
- Green chillies – 4
- Potato – 500 gm
- Lemon – 3
- Coriander leaves – 200 gm
- Mint leaves – 200 gm
- Salt – as needed
How to prepare Karachi Biryani?
- Wash basmati rice thoroughly and soak for a while.
- In a round-bottomed vessel, fry the onion till deep brown, adding oil.
- Add chicken pieces and ingredients 5-19. Close the lid and cook well
- Boil water in another container; add rice, salt, mint and coriander leaves and half-cook the rice.
- Drain well when it’s done.
- Make beautiful layers using cooked rice and chicken. On top, sprinkle saffron mixed with milk and ghee.
- Close the lid tightly and seal using maida. In a hot oven or hearth, bake for 20 minutes and serve hot.
