Inji Puli (Ginger Sour Curry)

Ingredients for Inji Puli (Ginger Sour Curry):

1. Ginger – 100 gm

2. Kashmiri chilli powder – 2 big spoons

    Coriander powder – 2 big spoons

    Turmeric powder – 1 small spoon

3. Oil – As needed

4. Shallots – 100 gm, chopped

    Garlic – 1 full, chopped

    Curry leaves – 3 stalks

    Green chillies – 6 big, chopped

5. Mustard – 1 small spoon

6. Tamarind soaked in water and squeezed – As needed

7. Salt and water – As needed

How to prepare Inji Puli (Ginger Sour Curry)?

1. Remove the skin of ginger, cut into small pieces, crush and squeeze juice.

2. Slightly heat ingredients no: 2 together and keep aside.

3. Heat oil and fry ginger along with ingredients no: 4.

4. In the remaining oil, sputter mustard, add fried ginger along with powders.

5. Add tamarind juice, salt and water.

6. Boil the curry and put off the flame.
