Ingredients for Idiyirachi Ularthiyath:
1. Dry meat (Idiyirachi) – 100 gm
2. Turmeric powder – ½ small spoon
Red chilli powder – 1 small spoon
3. Oil – A little
4. Onions chopped – 100 gm
Garlic -10 cloves, crushed along with their outer skin
Shallots – 5, crushed
5. Curry leaves – 2 stalks
How to prepare Idiyirachi Ularthiyath?
1. Heat dry meat for a few minutes and beat it well by placing it on a stone.
2. Sprinkle a little water and allow the dry meat to soak.
3. When dry meat is well soaked, add the powders and mix well.
4. After half an hour, fry the dry meat in hot oil.
5. Heat oil in a pan, add ingredients no: 4 and sauté till golden brown.
6. Add fried meat and curry leaves.
7. Keep stirring and fry it well. Idiyirachi Ularthiyath should turn almost dry.
