Cauliflower Varutharacha Curry (Cauliflower Fried Coconut Curry)

Ingredients for Cauliflower Varutharacha Curry (Cauliflower Fried Coconut Curry):

1. Cauliflower cut into pieces – 250 gm

    Potato – 1, chopped into pieces

    Ginger – ½ inch piece

    Green chillies – 2, split into two or four

    Turmeric powder – A pinch

    Salt and water – As required

2. Coconut oil – 2 big spoons

3. Coconut – ½, scrapped

    Fennel seeds – ¼ small spoon

    Shallots – 3

    Garlic – 2 cloves

    Curry leaves – 1 stalk

4. Coriander powder – 1.5 small spoons

    Chilli powder – 1 big spoon

    Meat masala powder – ¼ small spoon

5. Coconut oil – 1 big spoon

6. Mustard – 1 small spoon

    Curry leaves – 1 stem

    Red chillies – 2, cut into two or three pieces

How to prepare Cauliflower Varutharacha Curry (Cauliflower Fried Coconut Curry)?

1. Cook ingredients no: 1, adding sufficient water.

2. Heat oil and fry ingredients no: 3.

3. When coconut turns red, add ingredients no: 4 and mix well.

4. When raw smell goes out and spices are fried well, put off the flame.

5. When fried coconut mixture cools, grind it to a smooth paste.

6. Add it to cooked vegetables and boil well.

7. Heat oil and temper using ingredients no: 6.

8. Add this oil to your cauliflower curry.

9. Serve with chapatti, idiyappam or any main course dish of your choice.
