
Ingredients for Hyderabadi Masala Chicken:
- Chicken – 1 kg
- Onions – 3
- Shallots – 5
- Ginger-garlic paste – 3 tsp
- Curd – ½ cup
- Coriander seeds – 4 tsp
- Cumin seeds – 2 tsp
- Cardamom – 2
- Red chillies – 10
- Pepper – ¼ tsp
- Turmeric powder – ¼ tsp
- Kashmiri chilli powder – 1 tsp
- Garam masala – 1 tsp
- Salt and oil – For preparation
How to prepare Hyderabadi Masala Chicken?
- Clean chicken and drain excess water.
- Fry sliced onion in oil and crush it well using your hands.
- Add beaten curd, salt, ginger-garlic paste and above crushed onions to chicken and mix well.
- Marinate the chicken and allow it to rest for an hour.
- Heat a pan and dry roast coriander seeds, red chillies, cumin seeds, cardamom and pepper.
- When it cools, make a fine paste adding shallots and turmeric powder.
- Heat a pan and add a little oil.
- Add this gravy to the pan and sauté well till oil separates.
- Add marinated chicken pieces, salt and Kashmiri chilli powder and mix it well.
- Close the lid and cook for 5 minutes.
- Add 1 cup of hot water and cook the chicken for 15 minutes with the lid closed.
- When the chicken is cooked well, add garam masala powder.
- When the oil clears and the gravy thickens, turn off the flame.
Note: Use sunflower oil for better results.
