Hill Station Egg Maggie recipe

Ingredients for Hill Station Egg Maggie:

  1. Maggi noodles – 2 packets
  2. Maggi masala – 2 packets
  3. Oil – 1 tbsp
  4. Onion – 1 small, finely chopped
  5. Garlic – 2 cloves, finely chopped
    Ginger – ½ tsp, chopped
    Green chili – 1, finely chopped
  6. Tomato – 1 small, finely chopped
    Green capsicum – 1 small, finely chopped
    Carrot – 1, grated
  7. Eggs – 2
  8. Turmeric powder – ½ tsp
    Chilli powder – ½ tsp
    Cumin powder – ½ tsp
    Pepper powder – As required
    Salt – as required

How to prepare Hill Station Egg Maggie?

  1. Boil water in a large pan, add the noodles and masala, and cook according to the packet instructions.
  2. Cook until the water content is fully absorbed, and keep aside.
  3. Heat oil in a pan and sauté the onion. Add ingredients no: 5 and sauté well.
  4. When the onion turns soft, add ingredients no: 6 and sauté.
  5. When the vegetables are cooked, move them to one side of the pan and crack the eggs into the pan. Scramble well.
  6. Add ingredients no: 8 and mix well. Combine again with the vegetables.
  7. Add the cooked noodles and toss gently until well mixed.
  8. Garnish with coriander leaves and serve.
