Grilled Veg Salad in Ginger Sour Dressing

Ingredients for Grilled Veg Salad in Ginger Sour Dressing:

  1. Tamarind – 1 small spoon
  2. Coconut oil – 1 big spoon
  3. Mustard – ½ small spoon
  4. Ginger – 100 gms, chopped fine
    Green chillies – 2, chopped fine
    Curry leaves – 1 stem
  5. Turmeric powder – ½ small spoon
    Chilli powder – ½ small spoon
    Salt – As needed
  6. Jaggery melted – ½ big spoon
  7. Beans – 8-10, chopped
  8. Green & yellow zucchini – ½ each, chopped
    Eggplant – 1, chopped
  9. Lettuce – 4 small leaves

How to prepare Grilled Veg Salad in Ginger Sour Dressing?

  1. Prepare tamarind juice by adding a little water.
  2. In a thick-bottomed pan, add oil and sputter mustard.
  3. Add ingredients no: 4 and sauté till the ginger turns light brown.
  4. Add tamarind juice, followed by ingredients no: 5, and reduce the flame.
  5. Keep cooking till it turns thick.
  6. Add jaggery and turn off the flame.
  7. Put beans in hot water and then in cold water.
  8. Grill ingredients no: 8 together.
  9. Toss the vegetables with tamarind gravy and decorate with lettuce leaves.
