Eggplant – Wheat Upma recipe

Ingredients for Eggplant – Wheat Upma (Vazhuthananga – Gothamb Upmaav):

  1. Broken wheat – 100 gm
  2. Salt – For taste
    Water – As required
  3. Coconut oil – 1 small spoon
  4. Mustard – 1 small spoon
  5. Chopped onions – 2 big spoons
    Chopped ginger – 1 small spoon
    Chopped green chillies – 1 small spoon
    Curry leaves – 1 stem
  6. Eggplant chopped fine – 100 gm
    Tomato chopped fine – 50 gm
    Cauliflower chopped fine – 50 gm
    Broccoli chopped fine – 50 gm

How to prepare Eggplant – Wheat Upma (Vazhuthananga – Gothamb Upmaav)?

  1. Cook broken wheat, adding salt and water. Strain excess water.
  2. Heat oil in a pan and sputter mustard seeds.
  3. Sauté ingredients no:5.
  4. Add ingredients no: 6 and sauté for 2 minutes.
  5. Add cooked broken wheat to it and stir the contents.
  6. When it’s done, turn off the flame.
  7. Serve hot with peanut curry.
