Countryside Meat Masala (Nadan Meat Masala)

Ingredients for Countryside Meat Masala (Nadan Meat Masala):

1. Meat – 1 kg

2. Chilli powder – 1 small spoon

    Fennel seeds – 1 small spoon

    Mustard – 1 small spoon

    Pepper – 1 small spoon

    Cumin seeds – 1 small spoon

    Cinnamon, cloves and cardamom – A little each

3. Onions – 3 big

    Tomato – 2, medium sized

    Ginger – 1-inch piece

    Garlic – 1 small cluster

4. Coconut scrapped – ½ cup

    Cashews – 6

5. Oil – As required

6. Salt – As per taste

7. Chilli powder – 2 small spoons

    Coriander powder – 2 big spoons

    Turmeric powder – ½ small spoon

8. Garam masala powder – 1.5 small spoons

How to prepare Countryside Meat Masala (Nadan Meat Masala)?

1. Wash meat and cut into small pieces.

2. Make a fine powder of ingredients no: 2.

3. Marinate meat pieces using this masala powder and allow it to rest for minimum half an hour.

4. Pressure cook meat adding sufficient water and salt.

5. Make a smooth paste of ingredients no: 3.

6. Fry cashews and scrapped coconut till golden brown and grind to a smooth paste.

7. Heat oil and sauté onion paste till a thin layer of oil appears on the surface.

8. Add ingredients no: 7 along with a little salt and keep sauting.

9. Add meat along with stock and cook till gravy thickens.

10. Add coconut-cashew paste and garam masala powder.

11. Cook till your meat masala turns dry.

12. Heat oil in a pan and sputter mustard seeds.

13. Fry chopped shallots and curry leaves and season your meat masala. But it is only optional.
