
Ingredients for Chicken Fajita Salad:
- Olive oil – 2 big spoons
Lemon juice – ½ cup
Garlic – 2 cloves, chopped fine
Cumin – 1 small spoon
Dried oregano – 1 small spoon - Chicken breast – 1, sliced thin lengthwise
- Olive oil – 2 big spoons
- Onion – 1, sliced lengthwise
- Red capsicum – 1, sliced thin lengthwise
Green chillies – 2 - Almonds – ¼ cup
- Lettuce chopped – 3 cups
- Cherry tomato – 1 cup, chopped into two halves each
Avocado – 1, chopped, after removing skin
How to prepare Chicken Fajita Salad?
- Mix ingredients no: 1 together in a bowl and prepare dressing.
- Transfer half the amount of dressing to another bowl and keep it in the refrigerator.
- In the remaining dressing, add chicken and allow it to rest for half an hour.
- In a big pan, heat olive oil and sauté onions.
- When it turns crispy, remove the chicken from the dressing and add to the onions.
- Keep sauting chicken till it turns pink.
- Add capsicum, green chillies and dressing kept in fridge for 3 minutes.
- Add almonds, mix well and transfer the contents to serving bowls.
- Decorate Chicken Fajita Salad with chopped lettuce, cherry tomato and avocado.
- Serve soon after preparation of the salad.
