Chicken Fajita Salad recipe

Ingredients for Chicken Fajita Salad:

  1. Olive oil – 2 big spoons
    Lemon juice – ½ cup
    Garlic – 2 cloves, chopped fine
    Cumin – 1 small spoon
    Dried oregano – 1 small spoon
  2. Chicken breast – 1, sliced thin lengthwise
  3. Olive oil – 2 big spoons
  4. Onion – 1, sliced lengthwise
  5. Red capsicum – 1, sliced thin lengthwise
    Green chillies – 2
  6. Almonds – ¼ cup
  7. Lettuce chopped – 3 cups
  8. Cherry tomato – 1 cup, chopped into two halves each
    Avocado – 1, chopped, after removing skin

How to prepare Chicken Fajita Salad?

  1. Mix ingredients no: 1 together in a bowl and prepare dressing.
  2.  Transfer half the amount of dressing to another bowl and keep it in the refrigerator.
  3.  In the remaining dressing, add chicken and allow it to rest for half an hour.
  4. In a big pan, heat olive oil and sauté onions.
  5. When it turns crispy, remove the chicken from the dressing and add to the onions.
  6. Keep sauting chicken till it turns pink.
  7.  Add capsicum, green chillies and dressing kept in fridge for 3 minutes.
  8. Add almonds, mix well and transfer the contents to serving bowls.
  9. Decorate Chicken Fajita Salad with chopped lettuce, cherry tomato and avocado.
  10. Serve soon after preparation of the salad.
