
Ingredients for Cashews Vilayichathu (Kasuvandi Vilayichathu):
1. Cashew nuts – 2 cups
2. Sugar – 1 cup
Water – ¼ cup
3. Yellow colour – A drop/pinch
Milk – ¼ small spoon
4. Butter – ¼ small spoon
Lemon juice – ¼ small spoon
Salt – A pinch
Vanilla essence – ½ small spoon
5. Sesame white or black roasted – ¼ small spoon (optional)
How to prepare Cashews Vilayichathu (Kasuvandi Vilayichathu)?
1. Microwave cashews in the oven till they start to turn brown.
2. Add water to the sugar and melt it by placing it in a flame.
3. Mix the yellow colour with milk and add to the sugar solution.
4. Keep boiling till the sugar solution is prepared.
5. Add ingredients no: 4, mix well, and turn off the flame.
6. Add sesame seeds and blend the contents well.
7. When colour changes, add roasted cashews to it and mix well.
8. Place the pan back on the flame and cook on a low flame.
9. Continue cooking till cashews get a fine coat of sugar.
10. Turn off the flame and allow your Kasuvandi Vilayichathu to cool.
11. When it cools completely, store in dry, airtight containers.
