Cashews Vilayichathu (Kasuvandi Vilayichathu)

Ingredients for Cashews Vilayichathu (Kasuvandi Vilayichathu):

1. Cashew nuts – 2 cups

2. Sugar – 1 cup

    Water – ¼ cup

3. Yellow colour – A drop/pinch

    Milk – ¼ small spoon

4. Butter – ¼ small spoon

    Lemon juice – ¼ small spoon

    Salt – A pinch

    Vanilla essence – ½ small spoon

5. Sesame white or black roasted – ¼ small spoon (optional)

How to prepare Cashews Vilayichathu (Kasuvandi Vilayichathu)?

1. Microwave cashews in oven till they start to turn brown colour.

2. Add water to sugar and melt it by placing in flame.

3. Mix yellow colour with milk and add to sugar solution.

4. Keep boiling till sugar solution is prepared.

5. Add ingredients no: 4, mix well and put off the flame.

6. Add sesame seeds and blend the contents well.

7. When colour changes, add roasted cashews to it and mix well.

8. Place the pan back to flame and cook in low flame.

9. Continue cooking till cashews get a fine coat of sugar.

10. Put off the flame and allow your Kasuvandi Vilayichathu to cool.

11. When it cools completely, store in dry air-tight containers.
