Ingredients for Beetroot Pickle:
- Beetroot – 250 gm
- Coconut oil – 200 gm
- Mustard – 1 tsp
- Curry leaves – 2 stems
- Green chillies, finely chopped – 1 tsp
- Garlic, finely chopped – 1 tsp
- Chilli powder -3 tsp
- Turmeric powder – ½ tsp
- Vinegar – ½ cup
- Salt – as needed
How to prepare Beetroot Pickle?
- Grate beetroot
- Heat oil and splutter mustard seeds.
- Sauté green chillies, garlic and curry leaves.
- Add grated beetroot and cook well.
- Add chilli powder and turmeric powder and cook till its odour changes.
- Add vinegar and turn the flame off.
