Baji-Tomato-Corn Curry

Ingredients for Baji-Tomato-Corn Curry:

1. Onions chopped fine – ½ cup

    Gram flour – ½ cup

    Green chilli – 1, chopped

    Ginger chopped fine – 1 small spoon

    Curry leaves chopped – 1 big spoon

    Chilli powder – ½ small spoon

    Asafoetida powder – ¼ small spoon

    Soda powder – A pinch

    Salt – As required

2. Oil – For frying

3. Tomato – 3, chopped length-wise

    Green chillies – 4, cut length-wise

    Ginger chopped thin length-wise – 1 small spoon

    Chilli powder – 1 small spoon

    Turmeric powder – ½ small spoon

    Salt and water – As needed

4. Boiled corn cut into pieces – ½ cup

5. Scrapped coconut – ½ cup

    Cumin seeds – ½ small spoon

6. Coconut oil – 1 big spoon

7. Mustard – ½ small spoon

    Shallots chopped – 1 small spoon

    Red chillies – 2, cut into pieces

How to prepare Baji-Tomato-Corn Curry?

1. Mix ingredients no: 1 together in a bowl.

2. If needed extra water, sprinkle a little. But the dough should be tight, enough to pinch & take.

3. Allow it to rest for half an hour.

4. Heat oil in a pan and deep fry onion mixture little by little. Onion baji is ready.

5. Mix ingredients no: 3 together and cook well.

6. Add fried onion bajis and cooked corn pieces.

7. Make a fine paste of coconut and cumin seeds and add this gravy to corn mixture.

8. When it boils well, take off from flame. Curry should not be too thick.

9. Heat coconut oil and temper ingredients no: 7.

10. Add to your curry and serve hot.
