Shallots Pickle (Kunjulli Achar)

Ingredients for Shallots Pickle (Kunjulli Achar):

1. Gingelly oil – 2 big spoons

2. Shallots – 150 gm

3. Mustard – ½ small spoon

    Cumin seeds – ½ small spoon

4. Red chillies – 6

    Curry leaves – 2 stems

    Asafoetida powder – ¼ small spoon

5. Chilli powder – 2 big spoons

    Turmeric powder – 1/4 big spoon

    Salt – For taste

6. Mustard powdered – 1/2 small spoon

    Fenugreek powder – ¼ small spoon

    Jaggery – 1 small piece

7. Tamarind – Gooseberry sized

How to prepare Shallots Pickle (Kunjulli Achar)?

1. Heat oil in a pan and sauté shallots. Keep it aside.

2. In the remaining oil, sputter mustard and cumin seeds.

3. Add red chillies and curry leaves, and add asafoetida powder. Mix contents well.

4. Add sauted shallots, salt, chilli powder and turmeric powder and sauté again.

5. Using the ladle/spatula, gently mash shallots a little bit.

6. Add ingredients no: 6 and mix well.

7. Squeeze tamarind and add to shallots.

8. Add extra salt if needed. Mix and boil the contents well.

9. Allow your shallots pickle to cool off completely.

10. Store in air-tight container.
