Tofu is made from Soya Milk, and so it can be included in a healthy diet plan. It also includes vitamins and proteins and hence a good choice for breakfast dishes. To enhance its taste, marinate tofu using soya sauce, lemon juice and green chilli paste, and fry it after some time. Through this column I shall give to a new recipe – Vegetable Red Thai Curry.

Vegetable Red Thai Curry recipe

Ingredients for Vegetable Red Thai Curry:

  1. Vegetable oil – 2 big spoons
  2. Tofu – 500 gms
  3. Ginger chopped – 1 small spoon
    Green chillies chopped – 1 small spoon
    Onion – 1 big, chopped
  4. Red curry paste – 2 small spoons
  5. Soya sauce – 1 big spoon
  6. Vinegar – 1 small spoon
  7. Green peas – ½ cup
    Beans chopped – 1 cup
    Broccoli – 1 cup
    Tomato – ¼ cup
  8. Potato boiled and chopped into pieces – 1 cup
  9. Coconut milk (first extract) – 1 cup
  10. Palak – 1 cup
    Coriander leaves – As required
    Salt – For taste

How to prepare Vegetable Red Thai Curry?

  1. Heat oil in a pan and fry till they turn tender brown. Never fry it too much.
  2. In the remaining oil, sauté ginger, green chillies and onions.
  3. Add red curry paste to it and sauté it again.
  4. Add soya sauce and vinegar.
  5. Mix all the ingredients and then add the vegetables along with a little water.
  6. When vegetables are cooked, add the potato and coconut milk.
  7. Allow the contents to boil.
  8. Add fried tofu followed by palak, coriander leaves and salt.
  9. Close the lid and cook it well.
