Scrambled Egg Curry recipe

Ingredients for Scrambled Egg Curry:

  1. Eggs – 2
  2. Onion chopped – ½ cup
  3. Tomato chopped – 1
  4. Green chillies – 2 or 3
  5. Curry leaves – As required
  6. Chilli powder – ½ tsp
  7. Garam masala – ½ tsp
  8. Pepper powder – ½ tsp
  9. Turmeric powder – ½ tsp
  10. Coconut milk (1st extract) – 1 ¼ cup
  11. Salt, Oil – As required

How to prepare Scrambled Egg Curry?

  1. Heat oil in a pan and sauté onions, tomato, green chillies and curry leaves in this order.
  2. When onions turn golden brown, add salt and masala powder.
  3. Continue sautéing till a thin layer of oil appears on its surface.
  4. Beat the eggs and add them to the gravy, and mix well.
  5. When eggs are well-cooked, add coconut milk.
  6. Cook for 5 more minutes.

Note: If you want egg pieces in your curry, you can boil one egg, cut it into pieces and add it to this curry.
