
Ingredients for Scrambled Egg Curry:
- Eggs – 2
- Onion chopped – ½ cup
- Tomato chopped – 1
- Green chillies – 2 or 3
- Curry leaves – As required
- Chilli powder – ½ tsp
- Garam masala – ½ tsp
- Pepper powder – ½ tsp
- Turmeric powder – ½ tsp
- Coconut milk (1st extract) – 1 ¼ cup
- Salt, Oil – As required
How to prepare Scrambled Egg Curry?
- Heat oil in a pan and sauté onions, tomato, green chillies and curry leaves in this order.
- When onions turn golden brown, add salt and masala powder.
- Continue sautéing till a thin layer of oil appears on its surface.
- Beat the eggs and add them to the gravy, and mix well.
- When eggs are well-cooked, add coconut milk.
- Cook for 5 more minutes.
Note: If you want egg pieces in your curry, you can boil one egg, cut it into pieces and add it to this curry.
