Mutton Biryani – Recipe 2
Here I am sharing yet another recipe of Mutton Biryani, published on Vanitha in 2017. You can go through this link to get another awesome mutton biryani recipe published in Vanitha in 2012 edition. I have noticed one thing in common – Basmati rice is used for its preparation in most cases. While Kerala biryanis mostly use short length Keema rice for Biryani preparations, Mutton Biryani is one such exception.
Ingredients for Mutton Biryani:
1. Mutton – 1 kg, cut into small pieces
2. Basmati rice – ½ kg
3. Ginger – 100 gm
Garlic chopped – 50 gm
Curry leaves – As needed
4. Vanaspaty – 100 g
Coconut oil- ¼ cup
5. Cinnamon, cloves and cardamom together – 10 gm
6. Onions sliced – 5
7. Pine apple chopped into very fine pieces – ¼ kg
Coriander powder – ½ big spoon
Chilli powder – 1 big spoon
Turmeric powder – ¼ small spoon
Curd – ½ cup
8. Tomato – 6
Coriander leaves – As required
Mint leaves – As required
9. Roasted cashews – 50 gm
Roasted raisins – 50 gm
Onion 1 sliced and roasted – 1
How to prepare Mutton Biryani?
1. Clean mutton and cut into pieces.
2. Wash rice and place it to drain excess water.
3. Make a fine paste of ingredients no: 3.
4. In a big vessel with thick button, pour coconut oil and vanaspathy and mix together.
5. Now saute the spices, and then add onions and sauté again.
6. When onions turn brown colour, add the fine garlic-ginger paste along with mutton pieces and sauté for 10 minutes.
7. Add ingredients no: 7 to mutton pieces and cook for a while.
8. When mutton is half done, add ingredients no: 8 and mix well.
9. Now add rice on the top and pour water enough to immerse rice.
10. Sprinkle ingredients no: 9 on top.
11. Tightly close the vessel and cook in low flame for about 40 minutes.
12. You can also use maida batter to tightly close the lid so that flavour won’t escape.
13. After 40 minutes put the flame off and wait for 15 more minutes to open the lid.
14. You can slowly mix rice and mutton and serve hot.
