Kuttanadan Duck Roast recipe

Ingredients for Kuttanadan Duck Roast:

  1. Duck cut into pieces – 500 gm
  2. Shallots – ¼ cup
  3. Chopped ginger and garlic – 1.5 tsp
  4. Green chillies – 5
  5. Duck masala – 6 tablespoons
  6. Vegetable oil – 6-8 tablespoons
  7. Onions – 2
  8. Curry leaves – A sprig
  9. Green chillies – 5
  10. Tomato – 1
  11. Fried onions, curry leaves and potato – To decorate

How to prepare Kuttanadan Duck Roast?

  1. Make a fine paste of ginger, garlic and green chillies.
  2. Marinate duck pieces with the above paste.
  3. Allow it to rest for 1 hour.
  4. Fry duck pieces in a frying pan, adding oil.
  5. In the remaining oil, sauté the tomato and chopped green chillies till a layer of oil appears on the surface.
  6.  Add 2 cups of hot water and mix well.
  7. When it boils, turn off the flame, transfer it to a pressure cooker.
  8. Also, add fried duck pieces and close the lid.
  9. Pressure cook the contents and allow them to cool.
  10. Open the lid and heat the curry on a low flame till the gravy thickens.
  11. When the water content is fully absorbed, decorate your duck roast with fried curry leaves, sliced onions and potatoes.
  12. Delicious Kuttanadan Duck Roast is ready to serve.
