Ingredients for Duck Roast (Tharavu Roast) Recipe 2:
- Duck with thick flesh – 1 kg
- Pepper (green) – 1 big spoon
Coriander powder – 2 big spoons
Garam masala powder – 1 small spoon
Fennel seeds – 1 small spoon
Turmeric powder – 1 small spoon
Garlic – 10 cloves
Ginger – 1.5 inch piece
Green chillies – 4 - Vinegar – 1 big spoon
- Salt – For taste
- Coconut oil – ¼ cu
Ghee – 1 small spoon - Onions – 3, medium-sized, chopped
Shallots – 10, chopped - Coconut milk 1st extract- ½ cup
How to prepare Duck Roast (Tharavu Roast) Recipe 2?
- Clean the duck and cut it into pieces.
- Make a fine paste of ingredients no: 2, adding vinegar.
- Add salt and marinate duck pieces using this paste.
- Allow to rest for at least 1 hour.
- Heat oil and ghee in a pan and fry the duck pieces.
- In the remaining oil, sauté onions and shallots.
- Drain it off from the oil, and in the remaining oil, sauté the leftover gravy used for marinating duck pieces.
- Add water to it, enough to cook the duck pieces.
- Add fried onions, shallots and duck to the boiling water and cook well.
- Cook the curry till the water content is fully absorbed.
- When the water reduces completely, add coconut milk and mix well.
- Heat the curry well and take it off the flame.
