Chana/Paneer

 
Paneer is prepared from milk and it is used to make a wide-range of dishes – both sweet dishes and side dishes for chapathis. It’s used by Bengalis to make sweets while North-Indians prepare side dishes from Paneer. Though it’s quite new to south Indian territory, it is widely popular nowadays. Apart from preparing typical north Indian curries like Paneer Butter Masala and Kadai Paneer, south Indians also prepare Paneer dosa, Paneer Biryani etc. Paneer is indeed a tasty vegetarian dish. 

Ingredients for Chana/Paneer:

  1. Milk – 1 litre
  2. Lemon juice – 1 lemon

Method of preparation of Chana/Paneer:

  1. Make lemon juice adding ¼ cup hot water and place it aside
  2. Heat milk in a container and stir once in a while to avoid sticking to edges and bottom
  3. When it boils well, keep stirring and add lemon juice little by little to it.
  4. Keep stirring till whole milk splits from water and put the flame off.
  5. Filter paneer using muslin cloth and drain water completely. You can hang it somewhere to completely remove the water content or place a weight on it.
  6. Now mix it gently and make paneer balls out of it. Make sure that your paneer balls won’t break.
