Upmaav Vada

Ingredients for Upmaav Vada:

1. Ghee/Coconut oil – 1 big spoon

2. Green chillies – 4, chopped fine

    Curry leaves – 1 stem, chopped fine

    Shallots – 10, chopped fine

3. Water – 2 cups

    Salt – For taste

4. Semolina (not roasted) – 1 cup

5. Oil – As needed

How to prepare Upmaav Vada?

1. Heat oil/ghee in a pan and sauté ingredients no: 2.

2. When shallots turn crystal-like, add salt and water and boil the contents.

3. Add semolina to it slowly and stir continuously.

4. When it turns thick put off the flame and allow it to cool completely.

5. Transfer it to a container and keep it in refrigerator for a day.

6. Heat oil in a pan.

7. Grease your hands and place a little upma in your palm.

8. Make a ball and press it gently to make it flat.

9. Continue the process with the remaining upma.

10. Deep fry them until they turn golden brown & crispy.

11. Serve hot with chutney or sauce of your choice.
