
Ingredients for Thenga Kanji (Coconut Congee for Vishu):
1. Puzhungalari (par-boiled rice) – ½ kg
2. Coconut – 2 big, grated
Salt – For taste
How to prepare Thenga Kanji (Coconut Congee for Vishu)?
1. Wash the rice and cook it by adding sufficient water.
2. Crush coconut and add to rice when it’s well-cooked.
3. Also, add sufficient salt and mix well.
4. Turn off the flame and close the lid for the next 10 minutes.
5. You can take the outer layer of the banana stem for serving Thenga Kanji.
6. It is cleaned well and folded 4 times to make it a little thicker.
7. Coconut leaf midrib (eerkil) is used to fix both sides.
8. You can serve Kanji inside it. You can also place a banana leaf (tip portion) before you pour Kanji.
9. You can serve Chakka Erisseri and Jackfruit chips (Chakka Varuthath) as side dishes.
10. Leaves of the jackfruit tree are used to make spoons for serving Kanji.
