
Ingredients for Tharavu Pirattiyath (Duck Pirattiyath):
- Duck – 1 kg
- Vinegar – 2 big spoons
Salt – For taste
Turmeric powder – ½ small spoon - Coconut oil – 50 milli
- Mustard – 1 small spoon
Curry leaves – 1 stem - Onions – 100 gm, chopped
Shallots – 100 gm, chopped - Ginger – 1 piece, chopped
Garlic – 1 cluster full, chopped
Green chillies – 5, chopped - Turmeric powder – ½ small spoon
Coriander powder – 1.5 big spoons
Garam masala powder – 1 big spoon - Tomato – 125 gm, chopped fine
- Pepper powder – 1 big spoon
Salt – For taste
How to prepare Tharavu Pirattiyath (Duck Pirattiyath)?
- Clean the duck, cut it into pieces and wash it using a little vinegar.
- Marinate the duck using ingredients no: 2.
- Heat oil in a pan, and fry the duck. Keep it aside.
- In the remaining oil, sputter mustard and add curry leaves.
- Sauté shallots and onions till they turn golden brown.
- Add ingredients no: 6, sauté well and add ingredients no: 7.
- Add duck pieces and tomato, and sauté the contents.
- Add salt, pepper and a little water and reduce the flame.
- Cook till duck pieces are well-cooked, and the water content is fully absorbed.
- Gravy should fully cover the duck pieces.
