Ingredients for Thai Mango Chicken Salad:
- Raw mango – ½ kg
- Dried shrimp – 2 tbsp
- Oil – 2 tbsp
- Shallots – 2, thinly sliced
- Garlic – 7 cloves, thinly sliced
- Green chillies – 2, finely chopped
- Chicken minced – 200 g
Fish sauce – 2 tbsp
Sugar – 1 tsp - Basil leaves – ¼ cup, torn
- Roasted peanuts – 2 tbsp, crushed
Coriander leaves – 1 sprig, chopped
How to prepare Thai Mango Chicken Salad?
- Peel the raw mango, slice thinly, apply a little salt and keep aside for some time.
- Squeeze out the excess water from the mango and set aside.
- Soak the dried shrimp in water, remove the shells and crush coarsely.
- Heat oil and fry the sliced shallots until golden brown. Drain and keep aside.
- In the same oil, fry the sliced garlic and drain.
- Add dried shrimp and green chillies to the oil and sauté until aromatic.
- Add ingredients no: 7 and cook well. Remove from heat and allow to cool.
- Add the fried ingredients, sliced mango and basil leaves and mix well.
- Garnish with roasted peanuts and coriander leaves and serve.
