Thai Mango Chicken Salad recipe

Ingredients for Thai Mango Chicken Salad:

  1. Raw mango – ½ kg
  2. Dried shrimp – 2 tbsp
  3. Oil – 2 tbsp
  4. Shallots – 2, thinly sliced
  5. Garlic – 7 cloves, thinly sliced
  6. Green chillies – 2, finely chopped
  7. Chicken minced – 200 g
    Fish sauce – 2 tbsp
    Sugar – 1 tsp
  8. Basil leaves – ¼ cup, torn
  9. Roasted peanuts – 2 tbsp, crushed
    Coriander leaves – 1 sprig, chopped

How to prepare Thai Mango Chicken Salad?

  1. Peel the raw mango, slice thinly, apply a little salt and keep aside for some time.
  2. Squeeze out the excess water from the mango and set aside.
  3. Soak the dried shrimp in water, remove the shells and crush coarsely.
  4. Heat oil and fry the sliced shallots until golden brown. Drain and keep aside.
  5. In the same oil, fry the sliced garlic and drain.
  6. Add dried shrimp and green chillies to the oil and sauté until aromatic.
  7. Add ingredients no: 7 and cook well. Remove from heat and allow to cool.
  8. Add the fried ingredients, sliced mango and basil leaves and mix well.
  9. Garnish with roasted peanuts and coriander leaves and serve.
