Ingredients for Soya Bean Cutlet with Sauce:
- Soya bean chunks – 1 cup
- Salt and turmeric powder – As required
- Oil – 4 big spoons
- Ginger chopped fine – ¼ small spoon
Garlic chopped fine – ¼ small spoon - Onions chopped fine – ¼ cup
Green chillies chopped fine – ¼ small spoon - Garam masala powder – A pinch
Chilli powder – 1 small spoon
Coriander powder – 1/2 small spoon - Boiled potatoes smashed – ½ cup
- Salt and pepper powder – For taste
- Maida, bread crumbs – As required
Yellow yolk – From 1 egg - Oil – For frying
For sauce:
- Tomato, cherry tomato – 6 each
- Oil – A little
- Garlic chopped fine – 1/2 small spoon
- Onion chopped fine – 1 small spoon
- Basil leaf – 2
How to prepare Soya Bean Cutlet with Sauce?
- Wash the soya bean and soak it in water for 1 hour.
- Boil water with salt and turmeric powder, and cook the soya beans well.
- Once cooled, remove water completely and mash the soya beans thoroughly.
- Heat oil in a pan and sauté ginger and garlic.
- When the garlic turns golden brown, add onions and green chillies and sauté again.
- Add the masala powders and fry until the raw smell disappears.
- Add smashed potatoes and soya chunks.
- Add sufficient salt and pepper, mix well, and switch off the flame.
- After the mixture cools, make small balls from it.
- Flatten each ball and shape it into small cutlets.
- Dip each cutlet in maida, then in egg yolk, and finally coat with bread crumbs.
- Ensure each cutlet gets a fine, even coating of bread crumbs.
- Heat oil and deep-fry the cutlets until golden and crisp.
- Serve the hot cutlets with any sauce of your choice.
- To prepare a special tomato sauce, dip red tomatoes in boiling water for 1 minute.
- Transfer them immediately to cold water, peel off the skin, and cut into small pieces.
- Heat oil in a pan and sauté garlic until golden brown.
- Add chopped onions and tomato pieces and cook until they soften.
- Cut cherry tomatoes in half and add them to the mixture.
- Add basil leaves, mix well, and turn off the flame.
- Serve this sauce along with hot cutlets.
