Pumpkin Coconut Milk Curry (Mathanga Paalu Curry)

Ingredients for Pumpkin Coconut Milk Curry (Mathanga Paalu Curry):

1. Pumpkin – 1 kg

2. Green chillies – 6, split into two

    Turmeric powder – ½ small spoon

    Cumin seeds fried and powdered – 1 small spoon

    Garlic – 4 big cloves, crushed

    Salt – For taste

    Water – 2.5 cups

3. Thick coconut milk – ½ cup

4. Oil – ½ big spoon

5. Mustard – ½ small spoon

    Red chillies – 2

    Curry leaves – 2 stems

How to prepare Pumpkin Coconut Milk Curry (Mathanga Paalu Curry)?

1. Remove skin and seeds of pumpkin and cut into small square pieces.

2. Cook pumpkin adding ingredients no: 2.

3. When pumpkin pieces are cooked well and water is reduced to half, smash the pieces using a ladle.

4. Add coconut milk and mix well.

5. Put off the flame when the curry starts boiling.

6. Heat oil and fry ingredients no: 5, and add to curry.
