Meat Rice and Baingan Salad

Ingredients for Meat Rice and Baingan Salad:

1. Oil – 100 milli

2. Pepper – ½ small spoon

    Cinnamon – 2

    Cloves – 2

    Cardamom – 2

    Bay leaf (Vayana Ila) – 1

    Onion – 1, chopped

    Green chillies – 4, chopped

3. Ginger – garlic paste – 2 small spoons

    Coriander leaves – A handful, chopped

    Pepper powder – ½ small spoon

4. Mutton cut into 1-inch pieces – ½ kg

5. Salt – For taste

    Pepper powder – ½ small spoon

    Ginger and garlic crushed – 1 small spoon each

6. Kaima rice/Jeera rice/Basmati rice – ½ kg

    Salt – For taste

7. Eggplant – 1

    Salt and oil – As needed

8. Onions chopped fine – 1/2 cup

    Tomato chopped fine – 1

    Green chillies chopped fine – 2

    Salt – For taste

9. Olive oil – A little

    Pomegranate seeds – 2 small spoons

How to prepare Meat Rice and Baingan Salad?

1. Cook mutton adding ingredients no: 5, and keep aside.

2. Heat oil in a thick bottomed pan and sauté ingredients no: 2.

3. Add ingredients no: 3 and continue sauting.

4. Add cooked mutton, mutton stock (left after cooking mutton), extra water needed to cook rice and salt.

5. Add rice, and when it boils, stir the contents and reduce to low flame.

6. When rice is well cooked and water content is absorbed, put off the flame.

7. Serve your meat rice with baingan raita.

8. To prepare Baingan Salad, take one big egg plant and slice it to pieces.

9. Marinate with salt and place it for a while.

10. Grease a pan with a little oil and place egg plant slices.

11. Flip both sides and cook them.

12. Chop them into tiny pieces and add ingredients no: 8 to it.

13. Finally toss with ingredients no: 9 and serve with meat rice.
