Masala Aloo Curry (Spicy Potato Curry)

Ingredients for Masala Aloo Curry (Spicy Potato Curry):

1. Onions chopped – 1

2. Green chillies chopped – 2

3. Oil – 2 tsp

4. Ajwain – A little

5. Ginger-garlic paste – 1 tsp

6. Tomato paste – From 3 nos.

7. Potatoes chopped – 2

8. Chilli powder – 2 tablespoons

9. Turmeric powder – ½ tsp

10. Salt – As required

11. Garam masala powder – 1 tsp

12. Amchoor powder (mango powder) – ½ tsp

13. Coriander leaves – A handful

How to prepare Masala Aloo Curry (Spicy Potato Curry)?

1. Heat oil in a pressure cooker and sputter ajwain seeds.

2. Add chopped onions and sauté till they turn golden brown.

3. Add green chillies and ginger-garlic paste and stir the contents well.

4. Add tomato paste and continue sauting till a thin layer of oil appears on the surface.

5. Add salt, turmeric powder and chilli powder and sauté for a few seconds.

6. Add potato pieces, a little water and close the lid of pressure cooker.

7. Cook potatoes for three whistles in high flame.

8. Reduce the flame and simmer for 5 more minutes, and put off the flame.

9. When pressure drops to zero, add garam masala powder and amchur powder.

10. Mix the contents well and finally add chopped coriander leaves.
