Lunchbox Cake

Ingredients for Lunchbox Cake:

1. Maida – 390 grams

    Baking powder – 10 grams

    Salt – 2 grams

2. Sugar – 400 grams

    Lemon skin scratched – from 1 lemon

3. Eggs – 4 big, brought to room temperature

    Vanilla essence – 6 grams

4. Thick milk – 160 Milli

5. Extra virgin olive oil – 160 Milli

For Italian butter cream:

6. Egg white – From 5 eggs

    Cream of tartar – A Pinch

7. Water – Quarter cup

    Sugar – 3/4 cup

8. Sugar – 1/4 cup

9. Butter – 450 grams, cut into small cubes

How to prepare Lunchbox Cake?

1. Preheat oven in 180 degree Celsius.

2. Take 2 cake tins sized 5 inches, grease them and place butter paper.

3. Take a big bowl and blend together ingredients 1.

4. Mix sugar and lemon skin and take it in a bowl.

5. Add ingredients 3 to it and beat well until the contents turn soft.

6. Take a mixer and blend maida mixture in the lowest speed, adding 1/3rd portion first.

7. Add milk and olive oil one time alternatively, and blend the contents.

8. Repeat the process in the order – maida, milk and olive oil, and finally end the process with maida.

9. Divide this battle into two halfs and pour into each cake tin.

10. Spread the top portion and bake in the preheated oven for 25 to 30 minutes.

11. To prepare the icing, beat egg white with cream of tartar.

12. Transfer ingredients 7 to a saucepan and boil it.

13. In the egg white mixture, add quarter cup sugar little by little until small hill like structures are formed on the surface.

14. When the sugar syrup turns thread like, pour it hot slowly (like a thread) into the above egg white mixture and continue beating till it cools.

15. Add butter cubes one by one and continue beating. This is the icing.

16. Spread this icing on the top of two cakes, and the completely cover the edges as well.

17. You can decorate the cake with fondant icing of your choice.
