Kinna Pathiri

Ingredients for Kinna Pathiri:

1. Basmati rice – 1/2kg

2. Coconut – 1.5 nos

3. Cardomom powder – 1 small spoon

    Salt – As required

4. Chicken breast – 1

5. Chilli powder – 1 small spoon

    Fennel seeds – ¼ small spoon

    Turmeric powder – ¼ small spoon

    Salt – As required

    Water – A little

6. Oil – 3 big spoons

7. Onions – 6 big, sliced thin

    Green chillies – 4, chopped fine

8. Coriander leaves and puthina leaves – A little

How to prepare Kinna Pathiri?

1. Soak rice for two hours.

2. Scrap coconut and extract coconut milk.

3. Grind well rice adding coconut milk and ingredients no: 3.

4. Prepared batter should be looser than that of dosa’s.

5. Cook chicken breast adding ingredients no: 5.

6. Water content should be fully absorbed.

7. Add one big spoon oil to it and allow the moisture content to fully evaporate.

8. Tear cooked chicken into small pieces using hands.

9. Heat a pan and add remaining oil to it. Saute onions and green chillies and add cooked chicken to it.

10. Sauté the ingredients well and add coriander and mint leaves to it. Put the flame off.

11. Apply a little coat of ghee on the surface of a vessel and pour two big spoons of batter to it.

12. Place a little chicken filling as second layer.

13. Pour two big spoons of batter as the third layer.

14. Steam cook the contents, and slice Kinna Pathiri to pieces before you serve.
