traditional rice sweets - Kadalaykkappam

Ingredients for Kadalaykkappam:

1. Black chickpeas (Karutha Kadala) – ½ cup

2. Coconut grated – 3 cups

3. Rice flour – 1 cup

    Sugar – 2 cups

4. Salt – A pinch

    Cardamom powder – ½ small spoon

5. Ghee – 2 big spoons

How to prepare Kadalaykkappam?

1. Soak chickpeas overnight, and in the early morning, separate them from the skin.

2. Cook the chickpeas using a pressure cooker and strain excess water.

3. Extract ½ cup of the first milk and 5 cups of the second milk from 3 cups of grated coconut.

4. Heat the 2nd milk, rice flour, and sugar in a thick-bottomed pan on a low flame and keep stirring.

5. Cook for approximately 20 minutes till contents thicken.

6. Add chickpeas, first extract of coconut milk, salt, and cardamom powder.

7. Cook for some time till the contents separate from the sides of the pan.

8. Add ghee and turn off the flame.

9. Grease a plate with a little butter and transfer the contents to it.

10. Using a spoon, level it and allow it to cool.

11. Cut your Kadalaykkappam into desired shapes and serve.
