Imarti

Ingredients for Imarti:

1. Black gram dal – 250 gm soaked

2. Saffron colour -2 gm

3. Sugar – 250 gm

    Water – 1.5 cups

4. Cardamom powder – ½ small spoon

5. Ghee – 1 big spoon

    Oil – 1 litre

How to prepare Imarti?

1. Add a little water to black gram and grind it. Batter should have thick consistency.

2. Beat it well to adjust the consistency. When you put a drop of batter in water, it should not sink; should float.

3. Add food colour and allow it to rest for 3-4 hours. The batter should rise up.

4. Add water to sugar and boil in low flame.

5. When it turns thread like, put off the flame and add cardamom.

6. Mix ghee and oil and boil in a pan.

7. Use a piping bag or put a small hole in a cloth piece and pour batter into it.

8. Squeeze the batter into hot oil in jalebi shapes. Make two layers.

9. Reduce the flame and when one side turns crisp, flip once and cook other side too.

10. Put it in hot sugar syrup and take out after 3-4 minutes.

11. Continue the process for remaining jalebis.
