
Ingredients for Duck Drumstick Curry (Tharavu Minthali Curry):
- Duck – 1 kg
- Moringa tree bark – ¾ cup
- Red chillies – 5
Mustard – ½ small spoon
Cinnamon – 3 pieces
Cardamom – 6
Cloves – 4 - Vinegar – 1 cup
- Oil – As required
- Ginger chopped fine – ½ small spoon
Garlic chopped fine – ½ small spoon
Green chillies chopped fine – ½ small spoon - Drumstick – 2, cut into 2-inch pieces
- Salt – For taste
- Coriander leaves – To decorate (optional)
How to prepare Duck Drumstick Curry (Tharavu Minthali Curry)?
- Cut the duck into small pieces after cleaning thoroughly.
- Scrape bark from the moringa tree and remove the thick outer yellow skin.
- Dip this bark along with ingredients no: 3 in 1 cup of vinegar for an hour.
- When the contents turn soft, make a fine paste.
- Take a little of this paste and marinate the duck pieces.
- Heat oil in a pan and sauté ingredients no: 6.
- When the contents are well sauted, reduce the flame and add the remaining masala paste.
- Cook the contents for a few minutes and add marinated duck, drumstick and salt.
- Never add water.
- Close the lid and cook the duck on a low flame till it is done.
- Check salt and add if extra needed.
- Your Minthali curry is ready. Decorate with coriander leaves if needed.
- You can serve this special duck curry with appam. It’s a perfect combination.
