kasuvandi theeyal - Drumstick Cashewnut Theeyal recipe

Ingredients for Drumstick Cashewnut Theeyal (Muringakka Kasuvandi Theeyal):

1. Drumstick – 200 gm

2. Red chillies – 2

    Coriander seeds – 1.5 big spoons

    Coconut grated – ½ cup

3. Coconut oil – 3 big spoons

4. Curry leaves – 2 stems

    Green chillies – 2, end split

    Shallots chopped – ½ cup

5. Turmeric powder – A pinch

    Raw cashews (not fried/Pacha Kasuvandi) – 180 gm

6. Tamarind juice – 4 big spoons

7. Coconut oil – 3 big spoons

8. Mustard – ¼ small spoon

    Curry leaves – 2 stems

    Red chillies – 1

How to prepare Drumstick Cashewnut Theeyal (Muringakka Kasuvandi Theeyal)?

1. Cut drumsticks into 2-inch pieces.

2. Dry fry ingredients no: 2 till they turn golden brown.

3. When it cools, grind it to a smooth paste.

4. Heat oil and saute green chillies, curry leaves, chopped shallots, and drumsticks.

5. Add turmeric powder and cashews and cook the contents, adding sufficient water.

6. When the drumstick is well-cooked, add tamarind juice and cook for a few more minutes.

7. Add fried coconut paste, mix well, and cook it well.

8. When the curry thickens, turn off the flame.

9. Heat oil and sauté ingredients no: 8.

10. Add this oil to the curry and serve.
