Chicken Biryani

Ingredients for Chicken Biryani:

1. Chicken – 1 kg

2. Curd – ½ cup

   Biryani masala powder (cinnamon piece, cardamom, cloves, star anise, sha jeera, cumin seeds, fennel seeds and mace) – ½ small spoon

   Salt – As needed

   Ginger paste – 1 small spoon

   Garlic paste – 1 small spoon

   Green chilli paste – A little

   Pepper powder – A little

   Chili Powder – A little

   Lemon juice – From 1 lemon

3. Oil – As needed

    Onions – ½ kg

4. Green chilli paste – From 8 chillies

    Ginger-garlic paste – 2 big spoons

5. Tomatoes – 2

6. Biryani masala powder – ½ small spoon

    Mint and coriander leaves – ½ cup each

7. Ghee – For preparation

    Kaima (Jeerakasala) rice – ¾ kg

8. Water – As required (double quantity of rice)

9. Ghee – A little

10. Cardamom and cloves – 2 each

     Cinnamon – 1 piece

     Bay leaf (Vayana Ila) – 1

     Salt – For taste

11. Saffron mixed in milk – A little

12. Mint and coriander leaves – To decorate

      Fried onions, cashews and raisins – To decorate

Method of preparation of Chicken Biryani:

1. Marinate chicken using ingredients no: 2.

2. Heat a little oil in a pan and sauté onions.

3. When it’s done, sauté ingredients 4 and 5 one after the other.

4. Add ingredients no: 6 and sauté for a few minutes.

5. Add marinated chicken and mix well.

6. Check salt and if you need extra, add it.

7. Close the lid and cook chicken till it is half done.

8. Heat ghee in a pan and fry rice for 4 minutes.

9. Take double quantity of water in another vessel and boil it adding a little more ghee and ingredients no: 10.

10. Cook rice till it is ¾ done and spread above chicken as layers.

11. In between the layers, add saffron mixed with milk and ingredients no: 12.

12. Pour a little ghee on its top, close the lid tightly and cook it.
