
Ingredients for Baked Chicken with Orange Marmalade & Couscous (Orange Lemon Chicken):
- Chicken thighs – 6
- Thyme – one bunch
- Lemon – 1
- Marmalade – 4 tablespoons
- Orange – 2
- Onion – 2, sliced lengthwise
- Salt and black pepper – to taste
- Couscous – 250 grams
Water – 250 ml
Chicken stock/chicken soup cube – 1
How to prepare Baked Chicken with Orange Marmalade & Couscous (Orange Lemon Chicken)?
- Preheat the oven to 200°C.
- Clean and pat dry the chicken thoroughly. Draw lines on it using a knife.
- Press the thyme sprigs into the slits of the chicken.
- Grate the lemon zest and squeeze out its juice. Mix both together.
- Add two tablespoons of marmalade and the juice of one orange to this mixture. This will be the sauce.
- Cut the remaining orange and both the onions lengthwise.
- Arrange the chicken in an ovenproof dish and spread the orange and onion slices here and there.
- Pour the prepared sauce over the chicken and season with salt and black pepper.
- Bake the chicken in the preheated oven for 45 minutes until it is well-cooked and golden brown.
- Prepare the couscous by mixing it with hot water and the chicken stock cube.
- Take some juice from the baked chicken dish and mix it with the couscous for added flavor.
- Place the couscous in the center of a serving dish.
- Arrange the baked chicken thighs around it and garnish with thyme.
