Crunchy Cheese and Palada
Ingredients for Crunchy Cheese and Palada:
For Crunchy:
1. Sugar powdered – 30 gms
Maida – 200 gms
Icing sugar – 50 gms
Egg – 1
Butter – 112 gm
For Cream Cheese Batter:
2. Yellow yolk – 2
Sugar – 30 gm
3. Gelatine – 4 gm, soaked in water and melted
4. Cream cheese – 125 gm
Whipping cream – 125 gm
For Palada Payasam:
5. Water – 100 milli
6. Ada – 20 gm
7. Milk – 300 milli
Sugar – 100 gm
8. Cardamom powder – 1/4 small spoon
Ghee – 10 milli
How to prepare Crunchy Cheese and Palada?
1. Pre-heat oven in 180 degree Celsius.
2. Mix ingredients no: 1 to get a paste.
3. Place it in fridge and after 1 hour, spread it.
4. Put it in pre-heated oven and bake for 12 minutes.
5. Beat yellow yolk and sugar together, and using double boiling method, make it a thick paste.
6. Add gelatine to it and mix well.
7. Mix ingredients no: 4 together and slowly add to yellow yolk mixture.
8. Boil water and put off the flame. Add ada.
9. Mix it well and close the lid. Keep it aside for 30 minutes.
10. Heat sugar and milk together and continue boiling till it turns thick cream like.
11. Add ada to it, and cook again in low flame.
12. When it’s done, take off your palada payasam from flame.
13. Add cardamom and ghee and stir the contents.
14. Take serving glasses and put a layer of crushed crunchy cheese in each one of them.
15. Pour cream cheese mixture on top, followed by Palada and serve.
