Okra – Mango Curry (Vendakka Maanga Curry)
Ingredients for Okra – Mango Curry (Vendakka Maanga Curry):
1. Coconut scrapped – 1 cup
Cumin seeds – 1 small spoon
Green chillies – 2
Shallots – 3 or 4
Curry leaves – 1 stem
Green mango – ½, cut into pieces after removing skin
2. Coconut oil – 2 big spoons
3. Mustard – 1 small spoon
Curry leaves – 1 stem
Green chillies – 2
4. Okra – 250 gm, cut into 2-inch pieces
5. Turmeric powder – ¼ small spoon
6. Green mango – ½, cut into pieces after removing skin
7. Water – 1 cup
8. Tomato – 1, cut into square pieces
How to prepare Okra – Mango Curry (Vendakka Maanga Curry)?
1. Make a fine paste of ingredients no: 1.
2. Heat oil in an earthen pot and sauté mustard, curry leaves and green chillies.
3. Add chopped okra and sauté well.
4. Add turmeric powder and mix it well.
5. Add coconut paste, mango pieces and sufficient water.
6. Cook till mango pieces and okra are well cooked.
7. Decorate with tomato pieces and serve hot.
