New Zealand Lamb Shanks
Ingredients for New Zealand Lamb Shanks:
1. Lamb leg – 300 gm (forelegs below the knees)
2. Garlic – 60 gm
3. Rosemary – 5 gm
4. Red wine – 115 milli
5. Demi-glace – 30 gm
6. Cooked and smashed potatoes – To decorate
7. Vegetables sauted along with garlic and sauted – To decorate
Tomatoes baked – To decorate
Tomato pieces – To decorate
How to prepare New Zealand Lamb Shanks?
1. Clean lamb leg and grill it till all its sides turn brown, and transfer it to a tray.
2. Heat a pan and sauté garlic.
3. Add rosemary and grilled lamb leg and sauté well.
4. Add red wine and cook till contents thicken.
5. Add demi-glace to lamb and cook in low flame for 1.5 – 2 hours.
6. Take boiled potato pieces in a serving plate.
7. Skew the lamb in the plate.
8. Decorate the lamb with ingredients no: 7 and pour the remaining sauce on its top.
