Varutharacha Kozhi Curry
Ingredients for Varutharacha Kozhi Curry:
1. Chicken – 1 kg
2. Coconut – 1, big
3. Oil – As required
4. Onions – 2 big, sliced
5. Ginger-garlic paste – 1 big spoon
6. Coriander powder – 2 big spoons
Chilli powder – 1 big spoon
Turmeric powder – 1 small spoon
Garam masala powder – 1 small spoon
7. Green chillies – 4, chopped
Tomato chopped – 1, big
8. Salt – For taste
Vinegar – 1 big spoon
9. Coconut scrapped – ½ cup
Red chillies – 2
Shallots – 4, chopped
10. Fennel seeds – ½ small spoon
Coriander powder – 1 small spoon
Turmeric powder – ½ small spoon
11. Mustard – 1 small spoon
12. Shallots chopped – 4 small spoons
Red chillies – 2, cut into pieces
Curry leaves – 2 stalks
How to prepare Varutharacha Kozhi Curry?
1. Clean chicken and cut into pieces.
2. Add water to scrapped coconut and extract 1 cup each 1st, 2nd and 3rd coconut milk.
3. Heat oil in a thick bottomed pan and sauté onions.
4. When it turns translucent, add ginger-garlic paste and sauté again.
5. When raw smell goes, add ingredients no: 6 and sauté again.
6. When the raw smell changes, sauté green chillies and tomatoes too.
7. Add chicken pieces, salt, vinegar and 3rd coconut milk.
8. Mix the contents well and cook chicken with lid closed.
9. When chicken is well cooked, add 2nd extract coconut milk and boil well.
10. Add 1st extract coconut milk, check salt and take off from flame.
11. Heat oil and sputter mustard seeds.
12. Saute shallots, chillies and curry leaves, and add to curry.
13. Mix the curry and serve hot.
