Ingredients for Varutharacha Kozhi Curry:
- Chicken – 1 kg
- Coconut – 1, big
- Oil – As required
- Onions – 2 big, sliced
- Ginger-garlic paste – 1 big spoon
- Coriander powder – 2 big spoons
Chilli powder – 1 big spoon
Turmeric powder – 1 small spoon
Garam masala powder – 1 small spoon - Green chillies – 4, choppe
Tomato chopped – 1, big - Salt – For taste
Vinegar – 1 big spoon - Coconut grated – ½ cup
Red chillies – 2
Shallots – 4, chopped - Fennel seeds – ½ small spoon
Coriander powder – 1 small spoon
Turmeric powder – ½ small spoon - Mustard – 1 small spoon
- Shallots chopped – 4 small spoons
Red chillies – 2, cut into pieces
Curry leaves – 2 stalks
How to prepare Varutharacha Kozhi Curry?
- Clean the chicken and cut it into pieces.
- Add water to the grated coconut and extract 1 cup each of the 1st, 2nd and 3rd coconut milk.
- Heat oil in a thick-bottomed pan and sauté onions.
- When it turns translucent, add ginger-garlic paste and sauté again.
- When the raw smell goes, add ingredients no: 6 and sauté again.
- When the raw smell changes, sauté green chillies and tomatoes too.
- Add chicken pieces, salt, vinegar and 3rd coconut milk.
- Mix the contents well and cook the chicken with the lid closed.
- When the chicken is well-cooked, add 2nd extract of coconut milk and boil well.
- Add 1st extract of coconut milk, check the salt and take it off the flame.
- Heat oil and sputter mustard seeds.
- Sauté shallots, chillies and curry leaves, and add to the curry.
- Mix the curry and serve it hot.
