Coconut Milk Rice – Recipe 1

Ingredients for Coconut Milk Rice (Thengaa Paal Choru):
1. Jeerakasala rice – 3 cups
2. Coconut – 1 medium-sized, grated
3. Salt – For taste
4. Biryani leaf (bay leaf) – 2 pieces
How to prepare Coconut Milk Rice (Thengaa Paal Choru)?
1. Extract 4.5 cups of coconut milk from the coconut.
2. Mix all ingredients together and transfer them to a thick-bottomed vessel.
3. Cook in a low flame till it’s done, and the water content is fully absorbed.

Coconut Milk Rice (Recipe 2)

Ingredients for Coconut Milk Rice (Recipe 2):
1. Ghee – A little
2. Cinnamon and cloves – A little
Shallots chopped – As required
3. Green chillies – 2
Garlic – 6 cloves
Ginger – 1 piece
4. Fennel seeds – 1 small spoon
5. Green peas – 100 gm
Carrot, beans cut lengthwise – 1.5 cups together
6. Basmati rice – 1 cup, fried
Coconut milk – 6 cups
Salt – For taste
7. Onions – 1, sliced
Cashews, raisins – To decorate
How to prepare Coconut Milk Rice (Recipe 2)?
1. Heat ghee in a pressure cooker and sauté ingredients no: 2.
2. Crush ingredients no: 3, add to the ghee and sauté again.
3. When it turns light brown, add fennel seeds followed by ingredients no: 5 and mix well.
4. Add ingredients no: 6, mix well and close the lid.
5. When steam comes out, put a weight on it and reduce the flame.
6. Cook for 10 minutes and turn off the flame.
7. Transfer the cooked rice to a serving plate.
8. Fry ingredients no: 7 in oil or ghee and pour on top of the coconut rice.
9. Serve hot.
