Unnakai (Unnakaya)

Ingredients for Unnakai (Unnakaya):

1. Ripen plantain (Kerala banana/Ethapazham) – ½ kg

2. Ghee – 2 big spoons

3. Raisins – 6

4. Coconut scrapped – 1 cup

    Sugar – 3 big spoons

5. Cardamom – 3, powdered

6. Oil – For frying

How to prepare Unnakai (Unnakaya)?

1. Cook banana and remove the thread and dark seeds inside.

2. Heat ghee and fry raisins first.

3. Add sugar and scrapped coconut and fry for a few minutes.

4. Add cardamom powder and put off the flame. This is the filling.

5. Smash banana before it cools off completely.

6. Take two big spoons of smashed banana and spread inside palm.

7. Place 1 spoon of filling inside the banana.

8. Close it completely and make spindle shape.

9. Continue the process for remaining banana and filling.

10. Deep fry your unnakai in hot oil, till it turns golden brown.

Note: Not choose over-ripened plantain for making this delicious sweet/snack. Always remove those black seeds and outer fiber like structures of cooked banana, before smashing.
