Pumpkin Pulincurry (Mathanga Pulincurry)

Ingredients for Pumpkin Pulincurry (Mathanga Pulincurry):

1. Pumpkin – ¼ kg

2. Turmeric powder – ¼ small spoon

    Salt – For taste

    Water – ½ cup

3. Coriander – 1 small spoon

    Black gram – 1 small spoon

    Bengal gram – 1 small spoon

    Red chillies – 6-8

4. Coconut scrapped – 1/2 cup

    Tamarind – A little

5. Jaggery – A little

6. Oil – 2 big spoons

7. Mustard – ¼ small spoon

   Curry leaves – 2 stalks

   Shallots – 3, chopped

How to prepare Pumpkin Pulincurry (Mathanga Pulincurry)?

1. Cook pumpkin pieces adding ingredients no: 2.

2. Fry ingredients no: 3 in a pan and allow it to cool.

3. Make it a fine paste adding coconut and tamarind.

4. When it’s done, add jaggery and boil the contents.

5. Add coconut gravy to it, and boil well.

6. When the curry thickens, put off the flame.

7. Heat oil in a pan and sputter mustard seeds.

8. Fry shallots and curry leaves and add to your Mathanga Pulincurry.
