Mathanga Pradhaman recipe

Ingredients for Pumpkin Pradhaman (Mathanga Pradhaman):

1. Pumpkin – 200 gm

2. Ghee – 4 big spoons

3. Jaggery – 400 gm, melted

4. Coconut milk 3rd extract – 1 cup

    Coconut milk 2nd extract – 1 cup

    Coconut milk 1st extract – 1 cup

5. Cumin powder – ¼ teaspoon

    Cardamom powder – ¼ teaspoon

    Dry ginger powder – ¼ teaspoon

6. Ghee – 2 big spoons

7. Coconut pieces – 1 big spoon

    Raisins – 1 big spoon

    Cashews – 1 big spoon

How to prepare Pumpkin Pradhaman (Mathanga Pradhaman)?

1. Remove the skin of the pumpkin and cook it, adding sufficient water.

2. Smash it once using a mixer.

3. Heat the ghee and sauté the pumpkin.

4. When it is half done, add melted jaggery.

5. Reduce the flame and keep stirring the contents to avoid sticking to the bottom.

6. When the contents thicken, add the third extract of coconut milk and stir the contents.

7. When the contents thicken, add the second extract of coconut milk.

8. Continue boiling till pradhaman thickens.

9. Add the first extract of coconut milk and turn off the flame before it starts boiling.

10. Add ingredients no: 5 and mix the contents well.

11. Heat ghee and fry ingredients no: 7.

12. Add ghee along with fried ingredients to the pumpkin pradhaman.

13. Serve your pradhaman hot.
