Chemmeen Dum Biryani recipe

Ingredients for Prawns Dum Biryani (Chemmeen Dum Biryani):

1. Prawns – 500 gm

2. Jeerakasala/Kaima rice – 3 cups

3. Water – As required

4. Chilli powder – 2 table spoons

5. Turmeric powder – 1+1 tablespoons

6. Coriander powder – 3+1/2 tablespoons

7. Garam masala – ½ + ½ tsp

8. Salt – For taste

9. Onion – 4, big

10. Green chillies – 10

11. Tomatoes – 4

12. Ginger & garlic crushed – 3 table spoons

13. Ghee, oil – As required

14. Curd – 2 big spoons

15. Lemon juice – 1 big spoon

16. Cloves, cinnamon, cardamom – 2 each

17. Cashews – 10

18. Onion – 1, sliced and fried along with cashews

How to prepare Prawns Dum Biryani (Chemmeen Dum Biryani)?

1. Marinate prawns using chilli powder, turmeric power and salt, and deep fry in hot oil.

2. In the remaining oil, sauté onions adding salt.

3. When it turns brown, add crushed ginger, garlic and green chillies.

4. Add tomatoes and chopped leaves and close the lid.

5. When it’s well cooked, add coriander powder, turmeric powder, garam masala and salt.

6. Mix the contents well and put off the flame.

7. Add curd, lemon juice and fried prawns, mix well and close the lid.

8. In another vessel, heat ghee and sputter cloves, cinnamon and cardamom.

9. Add salt and water and boil well.

10. When water boils, add rice and cook well.

11. Strain off excess water.

12. Heat ghee in a vessel and put prawn masala.

13. Spread rice on the top and add a little garam masala and ghee.

14. Close the lid tightly and apply maida paste on the gap of the lid to make it tight.

15. Cook in low flame for 8 minutes.

16. After 15 minutes, open the lid and spread fried, onions and raisins.

17. Serve hot.

Prawn Dum Biryani (Recipe 2)

Ingredients for Prawn Dum Biryani (Recipe 2):

1. Onion – 6 

2. Tomato – 4 

3. Garlic – 2 bulbs 

4. Ginger – 1 piece 

5. Green chillies – 5 

6. Coriander leaves, mint leaves, curry leaves – as required 

7. Turmeric powder – 1 teaspoon 

8. Pepper powder – 1 teaspoon 

9. Garam masala – 1 teaspoon 

10. Fish masala – 2 teaspoons 

11. Large prawns (cleaned) – 1 kg 

     Turmeric powder and salt – As needed

     Fish masala – As needed

How to prepare Prawn Dum Biryani (Recipe 2)?

1. Clean the prawns and marinate with salt, turmeric powder, and fish masala. Let it rest for 1 hour. 

2. Heat oil in a pan, add sliced onions with 1 spoon of salt, mix well, cover and cook for 5 minutes. 

3. Then uncover and sauté well. Add tomatoes and ginger-garlic paste and sauté again. 

4. Once the tomatoes are well mashed, add turmeric powder, garam masala, and pepper powder. 

5. Sauté briefly, then add the prawns and some curry leaves. 

6. Mix well, add hot water, cover, and cook for 10 minutes. 

7. After that, open the lid and add fish masala, salt to taste, chopped coriander leaves, and mint leaves. 

8. If the mixture seems watery, keep it uncovered on high flame to reduce. The masala is now ready. 

9. Measure 1 kg of Jeerakasala rice using a cup. 

10. In a large pot, heat 3 tablespoons of ghee and a little sunflower oil. Add some sliced onion, cumin seeds, peppercorns, and cloves. 

11. Once the spices crackle, pour in 2½ cups of water for every 1 cup of rice using the same measuring cup. 

12. Add 1 spoon of vinegar and salt to the water and bring it to a boil. 

13. Wash the rice and drain the water. Add the rice to the boiling water, stir, and cover with a lid. 

14. Stir occasionally while cooking. 

15. Once the water is absorbed, the rice will be almost cooked. It will be fully done during the final dum process. 

16. In a large vessel, transfer ¾ of the cooked rice as the first layer. 

17. To the remaining ¼ rice, squeeze in some lemon juice. 

18. Add a portion of the prepared prawn masala over the rice layer. 

19. Add chopped coriander leaves on top, followed by another layer of rice. 

20. Add the remaining masala, top again with coriander leaves. 

21. Finally, spread the remaining rice on top. Flatten gently with a spatula, sprinkle some coriander leaves and a little garam masala. 

22. Cover and cook on low flame for 20 minutes. 

23. Prawn Biryani is ready. 

24. Garnish as desired while serving.
